Guiso de Lentejas<br />
<br />
<b>Ingredients:</b><br />
Onion, Med 1 unit<br />
Red Pepper, 1 unit<br />
Pork boneless , 8 oz<br />
Lentils,12 oz<br />
Chorizo or Andouille sausage, 1 unit<br />
Bacon, 8 oz chopped<br />
Potato, 2 medium<br />
Carrot, 2 medium<br />
Tomato sauce, ½ cup<br />
Condiments: salt, pepper, hot paprika (a pinch)<br />
Broth, 2.5 cups (Beef)<br />
<b>Preparation</b>:
Chop the onion and bell pepper into small cubes.<br />
Add them to a hot pot with a splash of oil and the chopped bacon and cook until the vegetables are transparent.<br />
Add the tomato sauce and cook over low heat.<br />
After ten minutes add the chopped pork, the chorizo cut into slices .<br />
In another container, soak the lentils, mixing them with homemade beef broth bring to a boil for 5 minutes. Transfer to the other pot.<br />
Add the carrots cut into small cubes.
Cook for about forty minutes over moderate heat. Broth has to almost cover all of it. If you need to add another 1/2 cup.<br />
Serve hot.<br />
<b>The "red" sauce</b><br />

Oil, 1 cup<br />
Green onion, a handful<br />
Beef Broth, 1/2 cup<br />
Sweet and spicy paprika, to taste<br />

Stir in the tomato paste until well incorporated, then add the wine. Increase the heat to medium-high; bring to a boil and cook for 3 minutes.</span></div>

Discard the bay leaf and any unopened clams or mussels.</span></div>

4 to 6 Lbs Beef Brisket (it shrinks)<br />
Black Pepper<br />
5 Large carrots cut in slices<br />
3 Celery Stalks cut in slices<br />
3 Large onions (1 sliced 2 Chopped)<br />
2 cups of Red Vino<br />
1 lg 15.5 can of diced tomatos<br />
3 bay leaves<br />
2 TBL flour<br />

Directions:<br />

On a mortar smash the garlic with the pestle and add the kosher salt to it and continue mashing till you have a paste, add the rest of the rub ingredients saving 1/2 of the oil to rub the meat with. then stir to combine it all.<br />
<br />
<br />
Once you rub the meat with the oil and some crushed pepper add all the rub paste all over both sides of the meat. Don't be afraid of getting your hands dirty.<br />
<br />
<br />
Sear the meat in a large frying pan (even if it overflows the pan make sure it is all seared).<br />
set aside.<br />
<br />
In the same pan you can add a bit of olive oil or if you have some bacon fat and do a mirepoix.<br />
In other words saute the 2 chopped onions celery and carrots till onions are translucent and the other vegies are softer.<br />
<br />
Place the miepoix in the bottom of a roasting pan the meat on top of that and the sliced onion<br />
on top of that.<br />
<br />
Spread the can of tomatoes around the meat and then add the vino add the bay leaves last.<br />
<br />
Cover the pan with aluminum foil and bake for 3 hours at 325 (you can do this the day before).<br />
<br />
Let it cool and cut across the grain with an electric knife. While meat is out of the pan<br />
<br />
and if you did this the night before, get rid of the solidified fat. If you didn't try to skim the fat now.<br />
<br />
Transfer the liquids to a bowl leaving the solids in the pan.<br />
<br />
Add the brisket to the pan with the veggies.<br />
<br />
If you want a thicker gravy , mix two tbl of flower with 4 tbl of either wine or water and added to<br />
the gravy. Pour the gravy over the neat and cook for another hour.<br />
<br />

Serve with mash potatoes and something green<br />

1 onion, chopped<br />

1 (14 1/2-ounce) can diced tomatoes<br />
1 fresh rosemary sprig<br />
1 (15-ounce) can cannellini beans, drained, rinsed<br />
1 (15-ounce) can red Kidney beans, drained, rinsed<br />
10 cups chicken broth<br />
1 ounce piece Parmesan cheese rind<br />
2 tablespoons chopped fresh Italian parsley leaves<br />
Salt and pepper
Hot sauce (a piacere)<br />
6 Tablespoons of Parmesan cheese freshly grated to spinkle after you are done<br />

<b> Directions:</b>
Heat the oil in a heavy large pot over medium heat. Add the onion, carrots, celery, bacon, and garlic. Saute until the onion is translucent, about 10 minutes. Add the Swiss chard (or Spinach) and potato; saute for 2 minutes.<br />
Add the tomatoes and rosemary sprig. Simmer until the chard is wilted and the tomatoes are broken down, about 10 minutes.
Meanwhile, blend 3/4 cup of the beans with 1/4 cup of the broth in a processor until almost smooth.<br />
Add the pureed bean mixture, remaining broth, and Parmesan cheese rind to the vegetable mixture. Simmer until the potato pieces are tender, stirring occasionally, about 15 minutes. Stir in the whole beans and parsley. Simmer until the beans are heated through and the soup is thick, about 2 minutes.<br />
Season with salt and pepper, to taste. Discard Parmesan rind and rosemary sprig (the leaves will have fallen off of the stem.)<br />
Ladle the soup into bowls sprinkle with parmesan and serve.<br />

heat & continue to cook skins for 10 - 15 minutes and carrots are soft. Strain off skins & return broth to the

This is for 4 servings. To adjust, just figure one potato/person plus one or two for good luck.<br />

5 medium-sized Yukon Gold (or other potatoes used for potato salad)<br />

1 cup peas <br />

1 cup of diced and boiled carrots (not to soft)<br />

1 cup mayonnaise<br />

1 hard boiled egg chopped (optional)<br />

juice from 1/2 a lemon<br />

Boil the potatatoes till you can pierce them but not extremely mushy . Let them cool till you can handle them, peel the potatoes and chop them into 1-inch (or a little smaller) dice. <br />

In a large bowl add the cold ingredients, mix to coat all the vegetables. Stir in the lemon juice and salt.<br />

You can use their recipe or mine which follows:<br />
1 large matambre 3 to 4 LBS<br />
1/2 cup bread crumbs<br />
1 slightly beaten egg<br />
1 slice of bacon in thin strips
<br />
2 tbls of mixed chopped garlic and parsley<br />
1 tsp oregano<br />
2 tbls of grated parmesan cheese<br />
salt and nutmeg to taste (about 1 tsp each)<br />
2 hard boiled eggs<br />
2 boiled and diced carrots<br />
1/2 cup of peas.<br />

Method:<br />
Prepare a paste with the bread crumbs, beaten egg, parsley and garlic mixture and parmesan cheese. Spread the mixture over the flat meat. Spread the peas, carrots, salt and nutmeg and bacon evenly over the previous paste. Place eggs at one edge and start rolling as the video shows. Tie up and you can put the roll on a pyrex with two cups of wine and bake in a 350 oven, or boil in beef broth for 45 minutes.
Slice thin as a cold cut once it is cool and serve with Argentine potato salad (ensalada rusa).<br />

Return the overturn tortilla by sliding it.

Stir in the pumpkin, sweet potatoes and peanut butter<br /><br /><br />add the stock, salt and pepper and stir well until <span class="blsp-spelling-corrected" id="SPELLING_ERROR_7">smooth</span>, heat to a simmer and cook for 20 minutes.<br /><br /><br />When you are ready to serve, add in each bowl a squirt of heavy cream, 3o4 drops of hot sauce<br /><br /><br />and a bit of chopped <span class="blsp-spelling-corrected" id="SPELLING_ERROR_8">parsley</span> leaves.<br /><br /><br /><br /><br /><br />Serves 8 (can be doubled)<br /><br /><br /><a class="image" title="'A" href="http://en.wikipedia.org/wiki/File:Sriracha_hot_chili_sauce.jpg"></a><br />Note: One can of Pumpkin is about 3 cups and one large can of sweet potatoes is also about 3 cups. With cavities facing up put a tablespoon of butter in each cavity, then 1 teaspoon of the brown sugar . Arrange the carrots and the onions in the pan arround the squash.<br />pour 2 cups of the broth and cover tightly, place in the oven for 2 hours.<br /><br />Remove pan from oven allow to cool a bit so you can handle the veggies. Scoop with a spoon the flesh of the vegetables and put them in a pot. Add the carrots, the onionosn and the cooking liquid plus the 8 remaining cups of broth. Bring to a boil over high heat and simmer for 10 minutes or until the berries pop open. Remove from heat. Add sugar and stir until dissolved.<br />Cool. Can be frozen.<br /><br />People will ask you for this recipe. Either send them here for a copy or have a copy ready in a 3x5 card, you will need it!! To give credit where credit is due it originated from Ilene Berman's kitchen. I adopted it as mine, modified some ingredients and I now call it Henri's Summer Rice salad. Why Not.<br />
<br />
Two things make this one a winner. You <strong>have</strong> to use "Success" Rice.<br />
The one that comes in the boil a bag. You <strong>Have</strong> to use the right proportion of vinaigrette dressing. I said two but it is three, you <strong>have</strong> to use fresh dill and fresh parsley.<br />
<br />
Vinaigrette Dressing<br />
<br />
1/2 Cup red wine vinegar<br />
2 Tbs Dijon Mustard<br />
1 Tsp Salt<br />
1 Cup olive oil<br />
1/2 Tsp Pepper<br />
2 Tbs Sugar<br />
<br />
Mix and set aside.<br />
<br />
The veggies: Plus or minus whatever you like! It has to be colorful.<br />
8 Cups of Cooked and Cold Rice ( That Would be 4 Success Bags)<br />
<br />
Chop into very small dice<br />
<br />
1 Green Pepper<br />
1 Red Pepper<br />
1 Orange Pepper or Yellow or Both<br />
1 Red Onion<br />
1 Bunch of Green Onions<br />
1 cup of Currants or chopped raisins<br />
1/2 Cup of Dried apricots or white raisins<br />
1/2 Cup of Dried Cherries or Cranberries<br />
Note that I say one or the other, not both. If you want to use both reduce to 1/4 cups.<br />
It really does not matter what you put in it as long as you whatch the proportions<br />
(yellow or green squash, cucumber, celery, etc)<br />
<br />
10 oz of frozen Pettit Pois (little peas) a must<br />
1/2 cup of Fresh Parsley chopped<br />
1/4 cup of Fresh dill chopped.<br />
<br />
Add all the chopped vegetables to the rice, only after rice is cold, then add the vinaigrette and toss.<br />

You will be asked for this recipe over and over again. Guaranteed!!<br />

Sour Cream<br />9 Tablespoons of flour<br />1 1/2 Tablespoons of Vanilla<br />1 2/3 cups of Sugar<br />9 eggs<br /><br />Mix Ricotta cream cheese and sugar till well blended. Add eggs one at the time, blend well after each egg. Add sour cream, flour and vanilla making sure that each ingredient is well incorporated. Pour into a ten inch well greased spring form pan.<br /><br />Bake at 350 degrees, in a pan of water (1-2 inches of water for 90 to 100 minutes.<br />Cake will rise above lip of spring pan and top will brown. . A good indication that it is done(If the top is not too brown don't wory and go to next step). Turn oven off and allow to cool in the oven for two hours. Cool cake using a cooling rack further till room temperature before refrigerating.<br /><br /><br />You will need a large mixing bowl, probably 5 quarts or better. Wrapping the outside of the spring form pan with aluminum foil will minimize leakage.
